Fast & Easy Kuah Kacang Recipe

Tasty, sweet & savory made-from-scratch kuah kacang (peanut sauce) on top of instant nasi impit (rice cake). Good with satay too.

I love kuah kacang, but I have never made it before. So this kuah kacang, made for an annual feast in my office is basically my first kuah kacang and Alhamdulillah, it turns out good (according to hubby and office mates. Hahaha).

I searched for the recipe online and the recipe from Azie Kitchen seems to be the easiest recipe for a first timer like me. I followed exactly what's in the recipe but I didn't use meat, I used dried shrimp instead. Hence the fast & easy kuah kacang 😉

Here is the recipe;

Ingredients:

500 gram of peanut
1/3 cup of dried shrimp (the original recipe use 1kg of meat / chicken)
1 cup of blended chili
1 cup of cooking oil
3/4 cup of brown sugar
1 glass of tamarind juice
2 tablespoon of salt

in a blender, blend together:

3 onion or 10 shallots (I used onion)
4 cloves of garlic
1 inch ginger
1 inch galangal
4 lemongrass 


First thing first, put the peanut in the oven and cook till brown or fry in a pan without oil (I used a tablespoon of oil). Do not overcook. After that, put it in a blender with some water and blend till it crushed, but not too smooth. (There are several methods for this step but this is the easiest one, I swear. No need to peel the skin off, just blend with the skin on.)

In a pan, pour the cooking oil and stir the blended ingredients till fragrant. Add in the dried shrimp, followed by the blended chili and cook until the chili is completely cooked. 

Later, add in the tamarind juice, blended peanut, brown sugar and salt. At this point of time, you can smell the  fragrant of authentic, traditional kuah kacang. Nyumss. If the sauce is too thick, pour in some water.

Lower the heat, and allow the kuah kacang to cook completely. I spent an hour for this.

Authentic kuah kacang has a sweet and savory taste so you may add or reduce the amount of chili and sugar according to your taste.
